Here is my 'recipe' for a light and slightly spicy (has more of a bite than any specific spiciness) salsa. I needed to make something super quick for games night, so I threw this together using what I happened to have on hand in the fridge. It took 5 minutes to make, so it's a super quick 'recipe'!
Consider the following more of a guideline as opposed to a recipe. I didn't write down specific quantities, but it's very flexible and you can use whatever ingredients you happen to have on hand!

- Tomato(es) (1, diced)
- Onion (any kind, but I used about 1/2 yellow onion - I recommend green, diced)
- Red Pepper (1/4, diced)
- Cucumber (1/4, diced)
- Large handful Buckwheat/Sunflower Shoots (chopped)
- Crushed/minced garlic (1 tsp)
- Sea Salt and Pepper to taste
- About 1/8 cup "Green Mexican Sauce" (it's really just salsa verde - a basic salsa made with tomatillos, jalapeños and onion)
'Directions':
Note: If you let it 'rest'/chill for 30 minutes or so after mixing, the flavours will have a chance to combine and develop.
