I've never liked stew, especially beef stew, ew. BUT, I LOVE this stew, it's amazing, truly. I made this with local stewing beef, onion, carrots, celery, and potatoes and honestly it was delicious and SUPER easy. I guess you'll want to make some yourself now so here is the "recipe" in a nutshell.
Peel (if you want), chop into bite size chunks and set aside:
Note: You can add or substitute any other vegetables (or even a different kind of meat) you happen to have. The nice thing about stews is they are really flexible and can be made so many different ways just depending on the ingredients you happen to have around!

- 1 large onion
- 3 or 4 carrots
- 1 or 2 celery ribs
- 2 or 3 large potatoes

Put your stewing beef (I used about 1 pound cut into small chunks) in a large pot to brown over medium to medium-high heat. If you need to add a little oil to help it not stick, you can do that. I used my enameled cast iron roasting pot which I love when I need something non-stick!
After the beef has browned (but not cooked all the way through), add your veggies, 1 tsp thyme, and salt and pepper to taste. Add enough water to cover everything and bring to a boil over medium-high heat.
At this point, I pressure canned my stew, but if you aren't going to do that, simply simmer on low for 30 minutes or so to let the flavours develop and voila, delcious beef stew.
